Taste research is still young, but human abilities to taste began to be shaped long before the dawn of our species. In this workshop, you’ll explore the physiology of taste and the relevant human genetic diversity across the globe that has helped shape cuisines. By tasting a variety of ingredients, you’ll learn to recognize some of the tastes that are only beginning to be recognized by science. Then, you’ll dive into the unusual flavor combinations of the past by rebuilding ancient herbal liquors to match your unique sensory profile. At the end of the evening, you’ll go home with your own bottle of bitters, made by you!
