What makes a cuisine? What does it mean to taste a culture's culinary environment? For the past few years Rene Redzepi of NOMA, which has been recognized as the best in the world by the San Pellegrino World's 50 Best Restaurant awards in 2010, and David Chang, executive chef and owner of Momofuku in New York, have pushed the boundaries of cooking in their restaurants.
Rene Rezepi and David Chang, engage in a continuous dialogue about the future of food, and will be in conversation with writer and editor Ruth Reichl about the identity of place, the new language of gastronomy and what they are hoping to accomplish through their cooking.

DAVID CHANG is the executive chef and owner of Momofuku Noodle Bar, Momofuku Ssäm Bar,
Momofuku Ko, and Momofuku Milk Bar. He is also the chef and co-owner of Má Pêche. Chang has been recognized as one of the most influential people of the 21st century. His most recent book is Momofuku.


RENE REDZEPI is head chef and owner of Noma restaurant in Copenhagen, where he creates his inventive take on Nordic cuisine with a distinctive emphasis on regional specialties. He is widely recognized as one of the world’s most influential chefs.

RUTH REICHL was the Editor in Chief of Gourmet Magazine for over 10 years. Her books include Mmmmm: A Feastiary, Tender at the Bone, Comfort Me With Apples, and Garlic and Sapphires and editor of The Modern Library Food Series.
